The following are the main tennets followed at the clinic:
use of regional and seasonal products
local meat (beef, lamb, poultry) once or twice a week
fish once or twice a week
100% gluten-free (due to high allergen potential)
No hidden sugars and reduced simple carbohydrate intake
Oils: linseed oil made in-house and organic Tuscan olive oil
dairy from only sheep or goat - no cow’s milk (due to high allergen potential)
eating rhythmically: avoid fats and proteins until lunch.

Chocolate cookies with chia seeds (vegan)
Ingredients (for approx 20 cookies)
1.25 cups almonds
1.25 cups hazelnuts
1 cup buckwheat (or other whole grain rice flour)
1/3 cup + 2 tbsp maple syrup
7 pitted Medjoul dates
3 heaped tbsp (20g) raw cocoa powder
3 tbsp chia seeds
2 tbsp coconutoil
Preperation
Preheat the oven to 390 F and line baking sheet with parchment paper. Grind the nuts in a food processor to a fine flour. Add all other ingredients with approximately 1/3 cup water until a sticky dough is formed. Take 1 tbsp of dough, form a ball and place on the baking sheet. Using a spatula or spoon, press the cookies flat. Bake for 20 minutes or until firm and edges slightly browned.
